- Prepare For Bhatura:-
- Prepare 2 cup maida / all urose flour
- You need 1/2 cup suji / semolina
- Prepare 1/2 cup curd
- Take 1/2 tsp salt
- Use 1 tsp sugar
- Prepare 1 tbsp oil
- Take 1/4 tsp baking powder
- Take as needed Oil for frying
- Prepare For chole:-
- Take 2 cup chickpeas
- You need 3-4 medium size onion
- Take 2 green chilli
- Provide 2 small tomato
- Take 1/2 cup curd
- You need 8-10 garlic cloves
- Use 1 " ginger piece
- Prepare 1-1/2 tsp red chilli powder
- Provide 2 tbsp coriander powder
- Use 1/2 tsp turmeric powder
- Provide 1 tbsp chole masala
- Take 1 pinch ajwain / carom
- You need 1 Pinch hing / asafoetida
- Take 1-2 bay leaf
- Get 1 star anise
- Get 4-5 black pepper
- Get 1 cinnamon stick
- Take 2-3 clove
- Get 1-2 cordamom(black &green)
- Provide 1 tbsp tamarind pulp/Amchur powder
- You need 1 tbsp chopped coriander
- Take 1/4 tsp Kasuri methi
- Use 1 tea bag /1 tsp tea leaves
- Get to taste Salt
- Take 4 tbsp Oil
Steps to make Chole Bhature:
- For bhatura:- take a bowl put maida,suji, curd, salt,baking soda,baking powder and mix well now add sufficient water to make soft dough now apply oil to it and let it rest for 2 hours
- Now knead dough and make small balls and roll it with rolling pin like a puri
- Now heat oil in a kadai and fry bhaturas till light golden colour
- Now crispy bhatura is ready
- For chole :- soak chickpea with pinch of baking soda in sufficient water for 7-8hour
- Now change the water of chickpea
- Now put chickpeas in cooker with sufficient water and add tea bag,1clove,2- 3 garlic clove, 2-3black pepper,1cinnamon stick,1 cardamom and cover the lid and take 4-5 whistle. (If tea bag is not available then take muslin cloth and put tea and cover properly and put a knot to it.)
- Now open the cooker and remove tea bag
- Take a jar put onions, green chilli,ginger,garlic and grind it
- Now take a pan put oil heat it and add bay leaf, cumin seed, staranise, clove, cardamom, cinnamon stick, pinch of hing and ajwaIn and stir it - Now add onion paste and saute it Now add finely chopped tomato and saute for few minutes
- Now add turmeric powder, coriander powder,red chilli powder, chole masala powder and mix well
- Now add chole and salt and stir well
- Now add tamarind pulp/Aamchur powder - Add some water and cover the lid and cook for 8-10 minutes on low flame
- Now add chopped coriander - Chole is ready
- Serve chole bhature with onions ring and lemon
