The ingredients needed to cook Adadhiya Pak:
  1. Prepare 1/2 kg urad dal flour(ready available- thin rawa like texture)
  2. You need 2 cup ghee for roasting urad flour
  3. You need 125 gm Gond/ gundar kani
  4. Prepare 250 gm khoya(unsweetened mawa)
  5. You need 1/2 kg sugar..to make syrup
  6. Prepare Ghee as required for frying Gond(I dry roasted in oven.)
  7. Take 1 pinch saffron strands
  8. You need Almonds- pistachio flakes for garnishing
  9. You need For aromat spices powder(dry masala specialfor making adadhiya
  10. Use 25gm Fenugreek seeds(dry methi)
  11. You need 25gm Cinnamon stick
  12. Get 25gm Peppercorns(Mari)
  13. Use 25gm Big cardamoms(Elacha)
  14. Take 25gm Green cardamoms (Elachi)
  15. Get 25gm Mace(javantri)
  16. Get 4 pieces Nutmeg(jaiphal)
  17. Prepare 100 gms Dry ginger powder (sunth powder)
Steps to make Adadhiya Pak:
  1. First dry roast all mentioned ingredients for preparing aromat spices powder (Special dry masala for making adadhiya pak).Cool and grind in mixer grinder jar to fine powder.Mix almond powder also in it…keep aside.
  2. Spread Gond pieces(gundar kani) in baking tray, place it in oven dry roast on High temperature 250 C for 8 mins…or you can fry little -little in hot ghee… keep aside.
  3. Heat 2 cups of ghee in big vessel,add urad dal flour, mix and roast on slow flame till light pink in colour.(approximately-10 mins).
  4. Now add khoya crumbles in urad dal mixture. Mix well.
  5. Roast this mixture for 10 mins on slow flame..till it turns golden brown in colour. Off the flame.
  6. Add roasted/ fried Gond, and all dry aromat powder (prepared special dry masala)..in above roasted mixture.
  7. Mix well.Remove this mixture in plate/ thali.
  8. In same big vessel add 1/2 kg sugar, pinch of saffron strand and 1 cup water.. stirring continuously make 1 string sugar syrup. Off the flame.
  9. Add the roasted urad dal-gond-aromat spice mixture in prepared sugar syrup mixture. Mix well for 2 mins.
  10. Pour this prepared Adadhiya Pak mixture in grease square tin. Sprinkle chopped almonds and pistachio flakes on it..as shown.
  11. Cool completely before cutting into squares pieces. Store in airtight container. It remain fresh for 10 days.
  12. Enjoy making it & Relish winter special sweet.. Adadhiya Pak.
