- Heat 1/2 ghee in pan and roast maida till golden brown
- In a mixing bowl add atta,ajwain,1 tspn oil,salt now knead it properly
- Mix sugar and water on the flame and dissolve your sugar you dont need to make chasni(syrup) just dissolve it
- Grind both dal and crush your cinnamon,pepper,1 cardomom,laung roughly in mortal pestle
- Heat 3 tspn oil in a pan add Crushed spices then dal fry it properly it will become non sticky to yr pan once fried. Tip use heavy base or non-stick kadai as it sticks.
- Cool the mixture
- Now mix roasted maida to sugar water mixture and heat it while stirr to form little liquid consistency to halwa
- Add dry fruits,1 black cardamom and 1/2 spoon ghee.your sira is ready
- Now make balls of atta and fill it with dal mixture
- Roll it like paratha
- Now heat a skillet add bidai to it
- In medium high flame dry roast first side till bidhai dries out
- Now flip it another side at low flame for 30 sec
- And cook it in direct flame till golden
- Serve hot bidhai with Sheera,dahi gujiya and achar enjoy!
