- Provide 250 gm Peanuts -
- Provide 250 gm Jaggery crushed -
- Use 2 tbsps Water -
- Use 2 tbsps coconut Powdered copra / dry -
Steps to make Peanut Brittle/Chikki using jaggery:
- Roast the peanuts in the microwave for about 4 to 5 minutes*. Stir the peanuts a couple of times during this period. Cool the peanuts. Remove the skin while it is still warm. Set aside.
- Dust the reverse side of a steel plate or a wooden board with ½ the coconut powder. Keep aside.
- On a medium flame place a thick bottom vessel with the crushed jaggery and 2 tbsp water. Start to stir. The mixture will start bubbling and if there are any hard bits of jaggery, use a potato masher to crush them. Continue to stir.
- After 4 minutes, check the jaggery syrup by putting a few drops of the syrup into a bowl filled with water. If it hold its shape then it is done, otherwise cook for another half a minute and check again. (The syrup should be ready within 4 to 5 minutes)
- Remove from flame and mix in the roasted peanuts. Pour immediately on to the dusted plate, sprinkle the rest of the coconut powder and flatten it with a rolling pin.
- Use a knife to cut the peanut chikki into squares. Store in an airtight tin
